Mac build github actions have been failing for some time now. It fails already on the package install phase, when it tries to update the homebrew. More precisely it fails to update python, as it chokes on the fact that the symlinks for the new version should overwrite those of the old version. The error is widely known, many times over the years, for many github users. As there has been no real (github or homebrew side) fix on any of these occassions, we have to work around it ourselves.
